Broiling the Perfect Steak

Grilling is something that I think Jaime and I both miss.  There are times where I crave a grilled steak.  And as much as I try, pan searing one isn't the same.  Not to mention it smokes up our apartment.

Which means I've had to find another way to achieve the steaks we want.  Who knew broiling could be so darn easy and effective?



Directions

**1) Bring the steak to room temperature

**2) Heat the broiler for 5-10 minutes and at the same time allow the cast iron skillet to heat up in the oven as well

**3) Salt the steak on both sides (you can marinade it prior to cooking as well)

**4) Remove the cast iron skillet from the oven and place the steak the skillet and then under the broiler

**5) Broil each side 4-6 minutes (depending on how you like your meat cooked)
**6) Remove meat and let rest for 5 minutes

Done!  Slice and serve with rice pilaf and some fruit.  it makes for a delicious summertime dinner.




The best part about broiling, it doesn't stink up the house as much as searing.
